How to Adhere Coping Stone

We bought a home in Jan 2018 and it has an inground pool and hot tub. We started rehabbing the pool last week and during the project we noticed all the coping around the pool was loose. We removed it all and are now wondering what to use to re-adhere the pavers? It looks like they used a type 1 mastic vice mortar? I know I have to clean each coping bullnose and the concrete to which it will be adhered to but am unsure which material to use. Any help is appreciated

To re-adhere the coping stones to a concrete collar we’d suggest using a mortar bed and then grout between them.
